3、布丁蛋糕
主要是採用黃油、雞蛋、白糖、牛奶為主要原料配以各式輔料，通過冷藏或烤制而成的一種歐式蛋糕。夏季要低溫冷藏,冬季無需冷藏可保存3-5天.
4、慕思蛋糕
是用明膠凝結乳酪及鮮奶油而成，不必烘烤即可食用。是現今高級蛋糕的代表。夏季要低溫冷藏,冬季無需冷藏可保存3-5天.
5、天使蛋糕(AngelFood Cake)
屬於乳沫類蛋糕，只用無油脂成分的蛋白部分，毫不油膩而且有彈性，非常爽口，其成品清爽雪白，彷彿安琪兒的食物，故稱之為「天使蛋糕」。因為它不含油脂與膽固醇，特別適合於怕胖或有心血管疾病的人。是一種健康點心。.常溫:冬季可保存3天,夏季可保存1天.最好低溫冷藏.
6、芝士蛋糕（CheeseCake）
主要是採用多量的乳酪做成的高級蛋糕。是現今高級蛋糕的代表，亦是美食家的新寵。市面售價非常昂貴。需低溫冷藏.
7、麵糊類蛋糕（battertype cake）
主要是採用大量的固體油脂，,故又稱油蛋糕.又分基本奶油蛋糕和重奶油蛋糕。常溫:冬季可保存3天,夏季可保存1天.最好低溫冷藏.

1,鮮奶油蛋糕
鮮奶油是植物性油脂,主要從大豆提練,爽而不膩,營養豐富,深受人們喜愛.
2,水果蛋糕
一般名牌蛋糕店製做鮮奶油蛋糕時,坯子切三層,加水果,加酒. 現在一般說的水果蛋糕主要是鮮奶油蛋糕上擺上水果,
3.巧克力蛋糕
主要是戚風蛋糕坯子上澆鑄融化的巧克力而成.
4,冰激凌蛋糕
用冰激凌代替鮮奶油.

蛋糕從比較專業的角度可分成三大類。
1-----麵糊類蛋糕（BATTER TYPE）
是以油脂、砂糖和麵粉為主要材料，通過油脂與砂糖的攪拌，拌入足夠的空氣，使蛋糕達到膨發的效果。
例如：大理石蛋糕、水果蛋糕、松糕（Muffin）等。
製作重點：
1）、黃油和奶油放入干凈的盆里，用電動打蛋器將油脂打軟。
2）、加入糖，打到顏色變成白色或淡白色；記得隨時將盆底以及盆邊刮干凈。
3）、全蛋分多次加到以上的油糖中，拌打均勻。每加一次蛋液都要打均勻才可以再添加。
4）、奶水（或鮮奶）慢慢加入，以慢速度打到糖顆粒融化。
5）、加入過篩的麵粉，拌勻。
6）、模具內塗油，加入生料烘烤。
2-----乳沫類蛋糕（FOAM TYPE）
是以蛋、砂糖和麵粉為主要材料，通過蛋和砂糖的打發，拌入充分的空氣，使蛋糕達到膨脹松軟的效果。
例如：海綿蛋糕、蜂蜜蛋糕、天使蛋糕等。
製作重點：
1）、蛋先隔水加熱，將糖加進去。記得要用打蛋器不斷攪拌，不然底部會煮熟；溫度不可以超過42℃，否則就要成炒蛋了。
2）、（蛋和糖離水）用打蛋器打到濃稠且顏色變白。
3）、低筋麵粉過篩，加進去攪拌均勻。
4）、所有材料都拌勻後，最後再加入一些可添香的材料。
5）、製作天使蛋糕時只用蛋青來打，將蛋青打到濕性發泡，還未到乾性發泡就可以了，不要打得太發。蛋清若是打到乾性發泡，當要拌入乾的粉料時，比較不容易拌開，而且打到乾性發泡，在烘烤中不會再繼續膨脹，會使烤出來的蛋糕口感較干，韌性較大。
3-----戚風類蛋糕（CHIFFON TYPE）
它混合了麵糊類和乳沫類兩種做法，改變乳沫類的質地和顆粒，具有較濕潤及柔軟的口感。一般生日蛋糕、瑞士卷、波士頓派的蛋糕層和裝飾用的蛋糕都是以戚風蛋糕來做的。
製作重點：
1）、在一個盆中，先將蛋黃加糖打到濃稠。
2）、加入奶、色拉油和香草精，攪拌均勻。
3）、在另一個干凈的盆中，先把蛋清打到起泡，再將糖分2--3次加到蛋清里，繼續打發至濕性接近乾性發泡。
4）、取1/3蛋清加入蛋黃中，拌勻。
5）、將1/3的低筋麵粉過篩加入蛋黃中拌勻。
6）、再將1/3蛋清加入拌勻，然後將1/3麵粉過篩加入，拌勻。
7）、最後將剩餘的蛋清和低筋麵粉全部加進去，攪拌均勻即可入模。
8）、戚風類蛋糕因為麵糊較稀，在烘烤中希望能沿著烤模往上膨脹，所以模具不塗油，否則蛋糕和模具間若是隔了一層油，蛋糕無法往上膨脹，不僅體積會小，內部住址也會變得密實而不膨鬆。
② 慕斯蛋糕和普通蛋糕有什麼區別
製作的原料不同、儲存方法不同，口感不同。
慕斯的英文是mousse，是一種奶凍式的甜點，可以直接吃或做蛋糕夾層。通常是加入cream與凝固劑來造成濃稠凍狀的效果。製作慕斯最重要的是膠凍原料如瓊脂、魚膠粉、果凍粉等，現在也有專門的慕斯粉了。另外製作時最大的特點是配方中的蛋白、蛋黃、鮮奶油都須單獨與糖打發，再混入一起拌勻，所以質地較為松軟，有點像打發了的鮮奶油。慕斯使用的膠凍原料是動物膠，所以需要置於低溫處存放。
普通的蛋糕是指使用麵粉、雞蛋等，經過長時間的發酵烤制而成。
